I would like to share this little gem with you today.  One of my dearest friends Britney Wilkerson shared this gem with me, who learned from her sister Lacy, who probably learned from another fabulous cook & so on... 

I, myself, have never been a pot pie fan...UNTIL this heavenly recipe was brought into my life.  Seriously, beware, your family, friends, neighbors, & strangers will beg you to make it ALL THE TIME after just one taste!!
 
 
Chicken Pot Pie ( from Heaven ;)
 
 
Ingredients:
  • 12 Oz. cream cheese (small chunks)
  • 1/2 c chicken broth
  • chopped, cooked chicken (2 breast)
  • 16 Oz. frozen mixed vegetables (better if thawed)
  • 1 package of Good Seasons Zesty Italian dressing mix
  • 1 refrigerated ready-to-use pie crust
Directions:
  1. Preheat the oven to 425.  Place chunks of cream cheese in large sauce pan (wok).  Add broth and cook on low until cream cheese is completely melted, stir frequently with a whisk.
  2. Add chicken, vegetables, & dressing mix
  3. Place bottom part of pie crust in 9 in. pie dish. (warm crust in microwave for up to 10 seconds if it begins to break/crack)
  4. Next, spoon cream cheese mixture into pie crust.  
  5. Cover with the top part of the pie crust & pinch along the edges.
  6. Cut a few slits in the middle of the top crust.
  7. Bake for up to 20 minutes.
