I, myself, have never been a pot pie fan...UNTIL this heavenly recipe was brought into my life. Seriously, beware, your family, friends, neighbors, & strangers will beg you to make it ALL THE TIME after just one taste!!
Chicken Pot Pie ( from Heaven ;)
Ingredients:
- 12 Oz. cream cheese (small chunks)
- 1/2 c chicken broth
- chopped, cooked chicken (2 breast)
- 16 Oz. frozen mixed vegetables (better if thawed)
- 1 package of Good Seasons Zesty Italian dressing mix
- 1 refrigerated ready-to-use pie crust
- Preheat the oven to 425. Place chunks of cream cheese in large sauce pan (wok). Add broth and cook on low until cream cheese is completely melted, stir frequently with a whisk.
- Add chicken, vegetables, & dressing mix
- Place bottom part of pie crust in 9 in. pie dish. (warm crust in microwave for up to 10 seconds if it begins to break/crack)
- Next, spoon cream cheese mixture into pie crust.
- Cover with the top part of the pie crust & pinch along the edges.
- Cut a few slits in the middle of the top crust.
- Bake for up to 20 minutes.
